What is Cajun seasoning?
It’s a spicy seasoning blend that is popular down in Louisiana, often referred to as “Cajun Country” because it’s where many Canadian French (also called “Cajuns” or “Cadjins”) settled around the 18th century. Cajun seasoning is widely used in Cajun cooking to flavor traditional ingredients like crawfish, shrimp, and sausage – as well as many vegetable and rice dishes.
Is it the same as Creole seasoning?
Not exactly. Some of the ingredients are the same, but in Creole seasoning you will typically also find a lot more herbs than a classic cajun spice blend, which relies more on various peppers to give it both heat and flavor.
Is Cajun seasoning really spicy?
I’ve found that spice level is relative depending on your personal tolerance, but Cajun seasoning in general will have some heat to it but it’s not going to be extremely hot – like say a jerk seasoning. The nice thing about making your own at home is that you can adjust to heat to your preference and enjoy all that flavor, while keeping it kid friendly if your family doesn’t enjoy overtly spicy foods.

What is it used for?
It can be used for a lot of things but here is a brief list of ideas:
- Spice rub for meat, chicken or fish prior to cooking
- Add it to mayonnaise & sour cream with a little lemon juice and sweetener for a dipping sauce
- Mix it with a little sweetener and rim your glass with it for Bloody Mary’s
- Season ground beef with it for a quick taco meat
- Add it to soups, stews and chilis for an extra kick.
- If you’re not eating low carb you can sprinkle it on popcorn
- Toss it with some shrimp and olive oil and roast them in the oven for a quick appetizer.

This Cajun Seasoning recipe omits the typical white pepper because it’s not a common ingredient for most people, and I don’t think there is a huge difference in the flavor. If you want to be truly authentic, you can add 1 teaspoon of ground white pepper to this spice mixture.
I also don’t use thyme in my version, because too many herbs pushes this into Creole seasoning territory and I’m trying to keep it as authentic as possible (minus the white pepper as mentioned above.)
