- 1 cup of unsweetened coconut milk
- 5 drops of liquid plain or vanilla stevia to taste
- 1 cup of frozen pineapple
- 1 cup of frozen peaches
- 1/2 cup of orange juice or water
- Ice pop molds or small paper cups
- Popsicle sticks
Instructions
- Sweeten the coconut milk to taste with a few drops of stevia.
- Fill about 1/3 of the ice pop molds or small paper cups with the coconut milk.
- Insert popsicle sticks and cover with pop mold with a cover or plastic wrap.
- Place the molds in the freezer and freeze them completely.
- Puree the pineapple in a blender with enough water to blend the mixture until thick and smooth.
- Fill the second third of the ice pop molds with pineapple and freeze them.
- Blend frozen peaches with enough orange juice to blend well, and fill the pop molds or cups with the mixture the rest of the way. Freeze again.
- Briefly run the molds under warm water.

- 2 green apples

- A handful of pumpkin seeds (optional)

Instructions
- Wash, core, and cut the apples into 1/4-inch slices.
- Place the apple slices in a small bowl with lemon juice and toss to coat.
- Heat the nut butter just until warm and a little bit runny. You can warm it in a microwave for about 20–30 seconds.
- Assemble the apple slices on a serving plate. Lay them in a single layer around the outside edge, then layer another smaller layer towards the inside center of the plate.
- Drizzle the nut butter in a circular motion, from the middle to the outside edge of the plate.
- Top the apple “nachos” with dark chocolate chips, coconut flakes, raisins, pumpkin seeds, almonds, or other nutritious toppings of your choice.
- Sprinkle the apples with a sprinkle of cinnamon.

Instructions
